60ml Blue Rabbit Rum
45ml Fresh lime juice
1 tbsp Ginger-infused simple syrup
8 mint leaves
Prepare a collins glass.
Gently muddle the mint leaves, juice and simple syrup in the glass.
Add ice cubes and pour over the rum. Gently stir.
Top up with ginger beer.
Garnish with fresh mint leaves and small pieces of crystalized ginger.
