Highland Tonic


  • 60ml Blue Rabbit Gin

  • 30ml Fresh pressed apple juice

  • 20ml Freshly squeezed lemon juice

  • 15ml Homemade sage syrup

  • 60ml Fever Tree Mediterranean Tonic


Step One

Place some ice into a cocktail shaker and add the gin, apple juice, lemon juice and sage syrup.

Step Two

Strain the mixture over a large ice cube in a short stemless glass.

Step Three

Top up with the tonic water.

Step Four

Garnish with a couple of small edible flowers.
